I probably won't do a ton of these 4K videos as they are extremely large in file size and take a lot of time to render/process. I'm also using the hi res Mario Kart Wii texture pack by Moukrea from the Dolphin forums. I used it instead of the official Dolphin release because the official release had more lag/stuttering issues with this game compared to the Ishiiruka build.
